The Cappuccino drink is traditionally made with 1/3 frothed milk, 1/3 espresso drink, and 1/3 steamed milk. The beverage is prepared using frothed milk, which has some steam milk, but a lot more microfoam. The espresso drink is prepared first, and then the frothed milk is added slowly to allow steam milk to be poured before topping off the drink with the thick froth. There are two variations of the cappuccino beverage: wet cappuccino and dry cappuccino. The wet cappuccino beverage has more steamed milk than a regular cappuccino, and the dry cappuccino has more foam than the regular cappuccino. The cappuccino is sometimes confused for a caffe latte because the drink uses steamed milk and a small layer of foam on top. The latte does not have as much foam as the cappuccino and has more steamed milk.
A Latte is made from 1/3 espresso drink and 2/3 steamed milk with a small layer of microfoam on top of the beverage. The milk used to make the latte is steamed and is less foamy. The procedure to add milk to the latte is similar to the cappuccino, with the exception of the small layer of foam that is added when topping off the beverage. The milk is poured a little slower when making the latte to preserve the crema layer and to create latte art with a small layer of microfoam.
Caffe Mocha (Mochaccino)
Caffe Mocha is chocolate syrup or cocoa powder added to a regular caffe latte. The drink comprises of two thirds steamed milk, one third espresso drink and a small amount of chocolate syrup or cocoa powder. The coffee beans can be grounded finer when creating a Mochaccino, to allow the drink to have a richer, sweeter taste. Another variation of the Mochaccino is the white mocha. White mocha is a caffe latte with added white chocolate syrup.
Cafe au Lait
A Cafe au Lait is prepared using brewed coffee and milk. The milk used to make the cafe au lait should be scaled or steamed. Traditionally, the coffee and milk are both prepared and poured into cup simultaneously, rather than being layered.
The caffe breve is essentially a caffe latte made with half-and-half milk and added flavors. The drink is made from 1/3 espresso drink, 2/3 steamed half-and-half milk and additional flavors like vanilla extract, caramel, cinnamon, etc.
The Cafe Bombon is a combination of a single or double shot of espresso drink and condensed milk. The condensed milk can either be poured into the glass and after that the espresso drink is added, or it can be poured into the glass with the espresso drink. The ratio of the mixture is 1:1, that is, one part condensed milk and one part espresso drink. The condensed milk and espresso drink is normally mixed together before consumption.
Frappe (“Greek frappe”)
The frappe is a cold coffee beverage that is made by combining instant coffee, sugar, milk and added ice. All the ingredients of the beverage are combined by mixing, shaking or blending. The drink should be mixed vigorously together to create thick foam. The harder you are able to shake or mix the ingredients together the better.
A Frappuccino is made from ¾ cup extra strength coffee, 1 cup low fat milk, 3 tablespoons of sugar (brown or granulated), 3 tablespoons of chocolate syrup, whipped cream and ice cubes. The coffee should be brewed and placed in the refrigerator to chill. When coffee is completely chilled, remove from refrigerator and place in blender with sugar, low fat milk, chocolate syrup and ice cubes. Blend the ingredients together, pour in a drinking glass and top off with whipped cream.
The Macchiato drink is steamed milk that is stained with a shot of espresso drink, also known as milk stain. The milk to espresso drink ratio is 2:1, for example, 2 oz. of milk to 1 oz. of espresso drink. The steamed milk is prepared first and the espresso is added to the milk. This is in contrast to the Caffe Macchiato drink where the espresso drink is prepared first and steamed milk is added to it. The espresso drink to steamed milk ratio for the caffe macchiato is 2:1; for example, 2 oz. of espresso drink to 1 oz. of steamed milk.
The flat white is made from two shots of espresso drink and 4 oz. of steamed milk. The espresso drink is prepared before pouring in steamed milk. When pouring the milk, a spoon is used to hold back the foam to prevent it from going in beverage. The milk pitcher should be a little lifted to allow the espresso drink and steamed milk to mix properly. The espresso drink should be combined with the steamed microfoam milk without any foam.
The Affogato drink is made with one shot espresso drink and a scoop of vanilla ice-cream. The drink is done by placing the scoop of ice-cream into the coffee cup, and then extracting espresso drink directly over the vanilla ice- cream.
